Vegan Raw Doughnuts with Key Lime Glaze

A healthy spin on a classic sweet treat, these cute donuts are perfect to satisfy any sweet tooth craving, topped with a rich, dairy-free glaze made from monk fruit and lime—without all the refined sugar and flour found in traditional donuts. Coconut provides plenty of energy-boosting medium-chain triglycerides and, as a bonus, limes contain vitamin C, which supports a healthy immune system. The combination of lime and coconut provide a fresh, tropical flare.
Typically, sweet treats and desserts contain sugar and refined grains which can spike your blood sugar and suppress your immune system. This treat uses only monk fruit as a sweetener. Monk fruit has a zero glycemic index and doesn’t spike your blood sugar.
Add almond flour, shredded coconut, vanilla, almond milk, lime juice, lime zest, salt, and monk fruit to a blender. In a small pan on low heat, add the coconut butter and coconut oil and melt.
Once melted, add the coconut to the blender and blend for 45 seconds until the mixture is combined into a sticky dough.

Prepare a sheet pan with parchment paper. Using damp hands or gloves, separate the dough into ping pong ball-sized pieces and place on the pan.
Flatten each ball slightly.
Poke each donut with your finger to create a hole in the middle.
Transfer to the fridge and chill for 10 more minutes.
Remove from fridge and cover each one with the glaze and pistachios.
Place in the freezer for 10 minutes to firm up. Enjoy frozen, or refrigerated, for a softer treat.
