Good Morning Matcha Bites

Matcha powder, a delightfully potent form of green tea, is overflowing with antioxidants and the feel-good chemical l-theanine. Matcha gives these tasty bites a beautiful green hue and, together with medium-chain triglycerides from the coconut and black sesame seeds, provides an energetic boost. Look for Fair Trade matcha and, to ensure that the growers, producers, and our environment were cared for throughout the supply and production process.
In a food processor, add everything except the black sesame seeds and process for about 2 to 3 minutes until well combined. Stop to scrape sides needed, about 3 times during this process.
Fold black sesame seeds in with a spatula and transfer to the refrigerator. Let set for about 25 minutes. Once the mixture is firm, scoop 1 tablespoon at a time and roll into round bite-sized balls. Repeat with all of the mixture.
Transfer to the refrigerator or freezer for 10 minutes. Enjoy cold. Store in the refrigerator for up to 5 days. Freeze for up to 3 months.
